Recipe adapted from Jami Delgado
2 cups blanched almond flour—I buy mine in 5 lb bags from www.honeyvillegrain.com
scant ¼ tsp unrefined sea salt
heaping ¼ tsp baking soda
¼ cup organic coconut oil—I buy this at TropicalTraditions.com
¼ cup honey (mild clover is best)—Costco has the best price on this.
1 Tbsp pure vanilla extract—Costco
1/3 cup dark chocolate (72% or more chips is ideal or carob chips)
Preheat the oven to 350 degrees. Oil a baking stone with coconut oil .Mix together dry ingredients with a fork. And remaining ingredients and mix thoroughly.Fold in chocolate chips. Drop by heaping tablespoons onto baking stone. Press down a bit with oiled fingertips. Bake for about 9 minutes. Cookies won’t brown much. Let cool for a couple of minutes before transferring to a wire rack.
